Biography
Chef Aurélien was born and raised in France and his love for cooking started at a very young age. He decided to go to school for it and holds multiple degrees in the culinary field including certificates of Professional Studies in Cuisine and Service & Marketing and even holds a Bachelors degree in Culinary Arts. His culinary career started in Paris working in various restaurants and hotels including the Ritz Paris Hotel and The InterContinental Paris Le Grand. He then moved to Bordeaux working as a sous chef in a one-star Michelin restaurant. After spending a few years there, Chef Aurélien moved back to Paris to become a Chef Instructor for Le Cordon Bleu where he taught cooking classes at all levels and oversaw the production kitchen. Aurélien then moved to Ottawa to become the Head Chef Instructor at Le Cordon Bleu Culinary Institute in Ottawa where he oversaw all the curriculum, supervised other instructors and teams and taught classes at all levels. Chef Aurélien spent almost 9 years there before joining us here at Carleton Dining and we are thrilled to have him as part of our team! When he is not in the kitchen, Aurélien likes to spend time with family and friends entertaining around a good meal and likes to travel to explore new food cultures. He always follows the notion that, “you can’t cook if you don’t like people”!
