Large scale production of sustainable sources of protein is becoming increasingly important as we better understand the significant environmental footprint of our diets. Insects are one of many alternatives to traditional protein sources that are part of the sustainable food systems puzzle. Matt Muzzatti, Carleton University PhD Student, is studying the dietary and nutrient requirements to maximize the growth of crickets as a source of protein. Carleton Dining has partnered with Matt for a pop-up at The Mix in the caf: Mexican churros with Cricket Cinnamon Sugar and Spiced Chocolate Sauce and Cricket Lollipops. Join us to learn more about Matt’s research and try this sweet sustainable pop-up menu!
