Toni is a veteran in the industry, he has been cooking up a storm since 1987. Toni started as a night Sous Chef at the Marble Works restaurant, looking after the dining room and the tour bus season and their famous Eddie May Murder Mystery company. Toni then began work as the Production Chef for the University of Ottawa (he likes Carleton University more) where he looked after the whole production kitchen and ensured a high level of service and quality of food. Currently, Chef Toni oversees the Culinary Production Team at Carleton University and has been involved in several prestigious events and functions on campus, demonstrating his expertise as a Catering Chef.
- ARAMARK CANADA Chef Conference, 2007 Bronze, 2008 Silver and 2009 gold placement
- Taking over the catering chef responsibilities after being a lead sous chef
- Francophone Games at Ottawa U. serving 8000 people per day for 10 days.
Much of his inspirations stem from his kids, especially his son, and nothing gives him more joy than seeing his family eating healthier and greener every day. They make him think seriously about the future of the industry and Toni takes that mentality into what he does for the students, faculty and staff here at Carleton University.
