We’re fortunate to have so much homegrown talent at the Dining Hall, and Executive Sous Chef Malcolm is proof of that! Having grown up in Ottawa, Malcolm studied Electro-Mechanical Engineering & Construction Technology at Algonquin College and worked in kitchens as a student. After being encouraged by a chef to pursue culinary work professionally, he switched programs and began working in Italian and French restaurants. Eventually, he started working in hotels which provided him the opportunity to travel and work in Yukon, Nunavut, Quebec, New Brunswick, Saskatchewan and all over British Columbia!
Malcolm describes his culinary style as being based in elevating nutrient density into “comfort wellness” food. You’re sure to see Malcolm next time you’re in the Dining Hall, so be sure to say hi when you do!
