Executive Sous Chef
Chef Mark is one of our Executive Sous Chefs at Teraanga Commons Dining Hall and has worked at Carleton for three years now. Long before serving guests at Carleton, Mark was inspired to pursue a career in the culinary arts by his father, who owned a restaurant and was always cooking something up. He went to culinary school at 18 and eventually went on to work at resorts in New Brunswick, Jasper and Banff. He even had the opportunity to work alongside celebrity chefs like Michael Smith and Wolfgang Leske!
Mark enjoys travelling to other countries around the world, learning about their culinary traditions and implementing them into his cooking in unique ways. He has worked in kitchens in Colombia, Peru and Nicaragua and has backpacked around Central & South America, the Caribbean and Europe working in hostels, restaurants and bars. You can often find him preparing dishes from these cultures and more during one of his pop-ups at Innovation Test Kitchen!
Aside from cooking, Mark is also passionate about surfing, snowboarding, rock climbing and just about anything that gets his adrenaline pumping. He is also a graffiti enthusiast and spends his time playing boards games and fostering animals when he can.
