We had a fantastic time at our Meal Prep like a Pro workshop where students prepared their very own overnight oatmeal in a jar and sunshine salad in a jar! We’re continuing on the “meal in a jar” trend by showcasing 5 delicious grab-and-go recipes that can be created in a mason jar. Ward off the winter chill and enjoy our favorite recipes that not only taste good but are good for you too! All of these recipes can be made a day ahead.

Breakfast Parfait

A Greek yogurt parfait makes for a great breakfast choice to eat right away or savor mid-morning. Layer your jar with 1 cup of Greek yogurt, drizzle with 1 tbsp honey, top with 1/2 cup of berries (frozen or fresh) and 1/4 cup of granola.

Tropical Salad

This salad will give you half of your daily fruit and vegetable servings. Layer your jar with 1/2 apple (chopped), 1/2 an orange (chopped), 1/2 cup chopped pineapple, 1/2 cup chopped kale and 1/4 cup dried cranberries. Add a drizzle of dressing of your choice.

Chia Seed Pudding

Chia seeds deliver high amounts of nutrients with few calories and are an excellent source of omega 3! Combine 1/4 cup chia seeds, 3/4 cup milk, 1/2 tsp honey, and top with fresh fruit if desired (add these on the day you’re going to eat it).

Quinoa Salad

Quinoa contains a good amount of protein, iron and fiber. Layer your jar with 1 cup of cooked quinoa, 1/4 cup red onions, 1/4 cup chopped cucumbers, 1/4 cup chopped bell peppers, 2 tbsp chopped green onions, 1 tsp lemon juice, 1 tbsp olive oil, and a dash of salt and pepper to taste.

Trail Mix

Prepare recipe by combining 2 tbsp almonds, 2 tbsp pumpkin seeds, 1/4 cup popcorn, 2 tbsp dried cranberries, and 1 tbsp dark chocolate chips. This recipe can be made in advance and stored for several weeks.
